Y’all, I love summer. I know fall is the new thing, but to me there’s nothing that beats sun dresses, pedicures, and every fruit I love being in season. And so when summer hits, I start watermelon chopping galore and I’m ready to make alllll of the fruit recipes.
Sadly, I’m in training so I missed The Peach Truck when it came to Tennessee. But I was lucky enough to try one of their peaches from a friend and dear Lord was it amazing. I decided that even if I just had regular grocery store peaches, I was going to make a peach inspired recipe.
So I took my non Peach Truck peaches and went to work and man did I love the result. This recipe is quick and easy to make and tastes good with chips, over chicken, or if you’re like me, by the spoonful as you wait for your chicken to cook. I decided to use fresh peaches (obviously) but opted for defrosted frozen mango for the ease of chopping. But if you have great fresh mangos, add those babies in! You do you!
Recipe
Ingredients
- 2 fresh peaches, diced (skin on)
- 1 cup of frozen mango, defrosted, diced
- 1/2 bell pepper (red is best for color contrast), diced
- 1/4 red onion, finely diced
- 2 tbsp cilantro
- juice of 1 lime
Directions
- Defrost your frozen mango by setting it on the counter for 30-60 min or placing the bag in the fridge the day prior
- Get to chopping! Dice the 2 peaches and mango into bite size pieces. Dice the bell pepper and red onion very finely.
- Add all chopped peaches, mango, bell pepper, onion, and cilantro into a bowl. Squeeze juice of one lime. Mix and enjoy!
- Store in a sealed contained in the refrigerator. It tastes even better the next day!
