Mom’s Jewish Apple Cake

We all have that one recipe that Mom always made. That recipe that we try to recreate when we become adults.

For me- that’s my Mom’s Jewish Apple Cake. She makes it every year at Christmas, and really for any large family gathering. Every time when I was little I would mix the cinnamon sugar and apple slices, obviously stealing a few to eat along the way, and the recipe is just so nostalgic for me.

So when I decided to make it for my own Christmas gathering, I gotta say, the pressure was on. Not really from anyone in particular except for me. I kept the tradition going: I made sure to eat a few apple slices covered in cinnamon sugar in the cooking process.

And when I bit into it, I knew… Mom would be so freaking proud.

Oh, and the rest of the dinner guests gobbled it up too.

It’s the perfect cake, sweet but not too sweet. Crispy brown edges and a soft center. The presentation is gorgeous and everyone is always impressed by a bunt cake with a nice little design. Plus as my mom always told me, it has apples in it, so it’s basically a healthy fruit and you should have no guilt eating it for breakfast the next day, if you have any left over that it.

Ingredients

5 Granny Smith green apples, peeled and sliced thin
2 cups + 4 Tbsp sugar, divided
2 Tbsp cinnamon
1 cup vegetable/canola oil
4 eggs
½ orange juice, no pulp
3 cups flour
1 Tbsp baking powder
1 Tbsp vanilla extract
Butter to grease the tube pan

Directions

1. Preheat the oven to 350 degrees. Grease (with butter) and flour your tube pan.
2. Peel and thinly slice the green apples. Mix together 4 Tbsp sugar and 2 Tbsp cinnamon. Sprinkle the apple slices with the cinnamon sugar mixture so all the apple slices are coated.
3. Cream together 2 cups of sugar with 1 cup of oil. Add in 4 already beaten eggs with the orange juice. In a separate bowl, mix the flour and baking powder. Slowly beat the flour mixture into the sugar/egg/oil/OJ mixture.
4. Add in vanilla extract
5. Pour ½ of the batter into the greased and floured tube pan. Layer 2/3 of the cinnamon sugar apples slices into the batter.
6. Pour the remaining ½ batter on top. Place the 1/3 remaining apples on the top to have beautiful apples at the top of your cake
7. Bake at 350 for 90 minutes. If will feel like a long time, it needs all that time. Mom promises 😊
