Green Smoothie

People have been using the Quarantine for a bunch of different productive things. And I’m very proud of those people. But I gotta say, I’m not quite sure I’m one of them.

I’ve successfully learned how to grocery shop for 2 people for 2 weeks at a time. So that something. I’ve video called friends more than I ever have in the past- never did I ever think I would have so many conflicting zoom calls I’d have to book.

But other than that, I’ve just been using the quarantine time to relax , do some online shopping, and make a few home improvements- hello garage shelving organization!

If you know me, I’m know I’m a produce lover. Mostly, I eat my bodyweight in fruit. But I’ve been trying to get in more veggies and so I’m absolutely loving my Misfits box. I get more greens than I usually ever eat and I’ve gotten to cook with veggies I’ve never used before. I’m now quite familiar with black radishes, turnips and beets 😊 Impressed, aren’t you?

With my new Misfits subscription and my goal to eat more veggies, I wanted to find a way to consume all of these greens so they didn’t go bad. I’d love to tell you that I just loveeeeeeee the taste of kale. But my mom always taught me not to lie, so I have to admit I’m not the biggest fan. But Misfits sent it to me and I know it’s good for me.

Enter the green smoothie.

This smoothie packs in a ton of greens, but the mango and banana give it just a touch a sweetness and make it really creamy. Add a tiny bit of ginger and lemon and you’ve got the perfect combo of flavors. I love adding in a scoop or two of my Vital Proteins collagen and having this as a complete breakfast. Leafy greens. Check. Protein. Check. Fruit. Check. It’s go time.

Ingredients

2 cups of spinach (loosely packed)
1 cup of kale
½ tsp fresh ginger
1.5 tsp lemon juice
1 cup frozen mango
1 large banana, frozen
1/2-1/3 cup water (can you sub coconut water or any milk you’d like here too)
Optional: 1-2 scoops Unflavored Vital Proteins collagen powder

Directions

  1. Blend.
  2. Enjoy

It’s that easy!

If you’re like me and have a blender from the 1970s then you may have to be a little patient and add the ingredients in waves. Just talk nicely to it. Add in half of your greens, lemon juice and ginger with a little water. Then add in your banana with a little more water. Then speak sweet nothings to your blender again. Then your mango and the rest of your greens with the rest of the water. Then buy a Ninja/Vitamix.

For real, my blender is the worst. But I’m dedicated to the green smoothie so we made it happen.
