Blueberry Breakfast Sausage Patties- Whole 30, Paleo
There are a handful of things in life that make me truly act like a kid in a candy store, and picking your own fruit is one of them. Call me crazy, but I actually get giddy when I drive past a field of fresh strawberries or blueberries and a “U Pick” sign. Probably most of my excitement comes from the fact that I know i’m going to eat my weight in berries while I pick, but I also just love feeling like I have a direct connection with where my food is coming from.
So it’s no surprise that I also force this summer activity on my husband too. I put him to work this July with very strict instructions- no stems, no green berries, and I want to come home with more blueberries than I can eat. And so 2.5 hours later, we left with 26 pounds of blueberries between the two of us.

That’s even a little too much for me. So I got creative and made my own Blueberry Breakfast Sausage Patties that have only 6 ingredients and are so tasty. Did you ever eat your blueberry pancakes, maple syrup and all, in the same bite as your breakfast sausage? Yup. And you loved every second of it? Double yup. Well this tastes like that, but Whole 30 and Paleo approved and without all of the extra sugar.

Not convinced that fruit belongs in your breakfast sausage? Just spend the 5 minutes it takes to mix all of the ingredients in the same bowl, and toss the patties on the stove top. You’ll be a believer by the end of it. The sweetness of the blueberry mixed with the savory pork and spices makes this a perfect addition to any breakfast. And the fact that it only takes about 15 minutes makes it ever better. No hours in the sun picking pounds of berries required. 🙂

Blueberry Breakfast Sausage Patties Recipe
Ingredients
2 pounds of ground pork
1.5 cups of blueberries
1 tsp salt
1/2 tsp pepper
2 tsp sage
2 tsp thyme
1 tsp olive oil
Directions
1. Heat olive oil in a large skillet on medium heat.
2. Mix all of the ingredients together in a large bowl. Form into flat sausage patties.
3. Place sausage patties into pan. Cook for about 3-4 minutes, the flip. Cover with a lid and let the patties cook for 3-4 minutes on the other side. Confirm they are finished cooking when the meat thermometer reads 160 degrees.
4. Repeat step 3 for your next batch of patties.
5. Enjoy!
