Three Ingredient Summer Salad

Guys. It’s watermelon season. Thank the produce Gods, it is late spring, and all of my favorite fruit is here and it is FRESH. Watermelons, peaches, berries. It’s here baby.

Personally, I could eat half a watermelon in a day- but I don’t think most people are like me.

More than likely, when you think of watermelon, you think of picnics and BBQs with tons of family and friends. When you show up bringing a bowl of cold, chopped, bright pint watermelon, you are a hero. Especially for the parents whose little ones are now occupied with a seed spitting contest while enjoying a healthy sweet treat.

If you want to elevate your watermelon game and be an even greater hero- this Three Ingredient Summer Salad is for you.

It’s a wonderful, refreshing combination of flavors. The mint and feta pair perfectly with crisp watermelon bites. And it’s easy. Like incredibly easy. Basically, buy the 3 ingredients, do a little chopping, and assemble on a pretty platter. You’re done. But don’t worry- I still included a recipe below with the full ingredient list and directions 😊 I’ve got you.

This will be perfect for an outdoor picnic in the park with friends or is even just as tasty to enjoy sitting out on the patio at your own home for a little snack or even dessert!

Ingredients

You may notice that there are no measurements here. That’s because this salad is so easy that you really don’t need them! Making this for just your family- only use half a watermelon. Making this for a big picnic- maybe grab 2 watermelons and 2 packages of fresh mint leaves!

Watermelon, chopped into cubes and chilled
Fresh Mint Leaves
Crumbled Feta
Optional:
Add a sprinkle of cayenne pepper if you’re feeling fancy
Add a drizzle of balsamic if you’re feeling fancy
Add a squeeze of lime juice if you’re feeling tart

Directions

  1. Chop watermelon into chunks and refrigerate. Can refrigerate the watermelon prior to chopping or after but you’ll just want it cold for the salad!
  2. Chop the mint leaves.
  3. Grab your crumbled feta out of the fridge.
  4. Assemble your salad- toss it all in a bowl and mix or lay it in a platter with a rows of watermelon, mint and feta cheese.
