Savory Meatloaf Muffins with Sweet Potato “Frosting”

I know, I know. When people think of meatloaf, they don’t get instantly excited. Maybe it was boring meal that you had when you were a kid. Maybe the one you make doesn’t pack a punch of flavor.

Well- I’m here to change that. These meatloaf muffins bring a whole new meaning to “ the meat and potatoes”. The meatloaf is so savory and flavorful on it’s own with the sautéed onions, coconut aminos, and spices.

The sweet potato “frosting” is the perfect touch. You can be fancy, have a fun project with your kids, and impress your dinner guests by using an icing decorating tool. Or you an be like me and just grab a big spoonful and put it on top. Either way brings you the perfect combo of savory meatloaf and slightly sweetened potato frosting with a dab of cinnamon.

Oh and if you reallyyyy want to get fancy- top the frost with a little paprika as a “sprinkling”. I’m giving you all the secrets for making these little muffins instagram ready 😊

Ingredients:

1 Tbsp olive oil
1 medium white onion, diced
2 gloves of garlic minced
2 lbs ground beef
2 Tbsp tomato paste
1 Tbsp coconut aminos
1 Tbsp oregano
1 tsp chili powder
2 tsp salt, divide
Pinch of crushed red pepper
4 small sweet potatoes
1 tsp cinnamon
Optional: paprika

Directions:

1. Preheat the oven to 375.

2. Saute the diced onion and minced garlic in olive oil over medium heat until the onions are translucent and browned. Remove from heat and let cool until you are able to touch.

3. In a large mixing bowl, add the ground beef, onion and garlic, tomato paste, coconut aminos, oregano, chili powder, 1tsp of the salt and the crushed red pepper and mix together.

4. Full the muffin tin with the meat mixture. No need to line the muffin tin.

5. Bake for 20 minutes.

6. Meanwhile, boil a large pot of water. Peel the potatoes and chop them into large chunks. Add them to the boiling water for 10 minute or until fork tender. Drain and remove from heat. 

7. Add the cinnamon and 1tsp of salt and mix with a hand mixer until the sweet potatoes are a smooth, mashed consistency. If you are using a decorating tool, you’ll want them to be very smooth without any little chunks.

8. Remove the meatloaf muffins from the tin, top with sweet potato frosting. Add a sprinkle of paprika to the top for an extra fancy touch!
