Mexican Street Corn Salad

Summer is here which means it’s time for all of the grilling, picnics in your backyard, corn on the cob, and BBQs. And I am here for it.

Festive, citrus-y salads jam packed with fresh produce is my jam, especially in the summer where all of the fruits and veggies are fresh and packed with flavor.

This corn salad was inspired by the Trader Joes “Everything by the Elote” seasoning. You know those fresh chilled corn salads full of cheese and lime in every bite- or the corn on the cob served with the creamy aioli on top of it. That’s the typical Mexican Street corn salad. But I wanted all of that yumminess, without the dairy.

Being far away from a Trader Joes (I know I’m not the only one who cries about this) and not wanting to wait for the seasoning to ship on Amazon (sometimes 2 day shipping just isn’t fast enough)- I created my own corn salad, packed with flavor and freshness. And let me tell you- the secret really is in the seasoning.

This is great as a side dish with grilled chicken (see below for a good seasoning mix for the chicken) or bring it as an appetizer with tortilla chips! Or, as always, you can be like me and just eat it in your kitchen with a spoon 😊

Ingredients

6 ears of corn, grilled
10oz cherry tomatoes, halved
1/4 fresh cilantro, chopped
1/8 cup finely diced red onion
Juice of 1 large lime or 1.5 smaller limes
1 tsp chili powder
1/2 tsp cumin
1/2 tsp salt
1/4 tsp onion powder
1/4 tsp garlic powder

Directions

1. Grill the corn on low heat for 15-20 minutes, turning every 5 minutes. You want a little bit of char on the corn. Pro tip- you can spray the grill with olive oil spray if you’d like so you don’t need to use butter on the corn.
2. Meanwhile, halve the tomatoes and dice the cilantro and lime.
3. Mix all of the seasoning ingredients together.
4. Once the corn is grilled and cooled, cut the corn off of the cob.
5. Mix the corn, tomatoes, cilantro, and red onion together. Squeeze the fresh lime juice on top and ddd in ½ Tbsp of the seasoning mixture. Mix all together, chill in the fridge for a few hours and enjoy!

You will have about ½ tbsp left of the seasoning mix. Save it to add on top of some grilled chicken, to top a salad, or if you want more on your corn!
